Peanut Butter Balls

Someone wanted the recipe for the Peanut Butter Balls that I always do at Christmas.

Peanut Butter Balls

1/2 c. peanut butter
2 sticks butter (melted)
1box confectioners sugar
1c. coconut ( up to you)
1 c. graham cracker crumbs ( add alittle more if mixture is to wet )
1c. chopped nuts
12 ozs chocolate chips
paraffin wax ( I usually start with about 1/2 block)

Mix peanut butter & butter. Add remaining ingredients.
Rolls into small balls. ( here's a trick of mine. I put these in the freezer until there hard. Makes dipping in the chocolate simpler.)

Over boiling water ( put one pan in another or use a double boiler) melt chocolate chips and paraffin wax.
Dip balls into melted chocolate and place either on a pan lined with wax paper or foil.

Tips:
You can use crunchy peanut butter and do away the nuts. Or don't use nuts at all.

The way I dip is alittle different than most I think. I put ice in a small bowl and keep my fingers cold ( not frozen) take a slotted spoon and put a ball into it, dip into the chocolate then tap spoon on the side of pan a couple of time and then remove the balls to wax paper.

I never make enough of these or any other candy that I do.

What I'm Working On .


I've been working on the Maxine purse from Lazy Girl .
Today I've got to go look for furniture then its back to the sewing room. Later on I think I'm going to bring my villages out of the attic. Even if we get the other house ready I'll have the villages here. And I'll put the tree there.

So much to do and so little time to do it.
